  • 2 Tbsp unsalted butter
  • 4 cloves garlic (minced)
  • ½ tsp salt
  • ½ tsp oregano
  • ½ tsp crushed red pepper flakes
  • ½ tsp smoked paprika
  • ¼ tsp ground black pepper
  • ½ cup sun-dried tomatoes (roughly chopped)
  • ½ to 1 cup vegetable broth
  • 2 15-oz cans butter beans (drained)
  • 1 cup chopped fresh spinach
  • 1 cup heavy cream
  • ½ cup grated parmesan
  • 2 Tbsp chopped fresh basil

Instructions

  1. In a large sauté pan, heat 2 tablespoons of unsalted butter over medium heat. Add 4 minced garlic cloves, ½ teaspoon each of salt, oregano, crushed red pepper flakes, smoked paprika, and ¼ teaspoon black pepper. Sauté for about 2 minutes until fragrant.
  2. Stir in ½ cup chopped sun-dried tomatoes and add ½ to 1 cup vegetable broth along with the drained butter beans. Cook on medium heat for around 5 minutes without covering.
  3. Remove from heat and stir in 1 cup chopped fresh spinach until wilted. Pour in 1 cup heavy cream and mix in ½ cup grated parmesan cheese and 2 tablespoons chopped basil until well combined. Serve warm.
