  • 1/2 cup diced onion
  • 1/2 cup breadcrumbs
  • 1 large egg
  • 1/4 cup milk
  • 2 cups uncooked macaroni
  • 2 cups shredded cheddar cheese
  • 2 tbsp butter
  • 2 tbsp flour
  • 2 cups milk (for cheese sauce)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix ground beef, onion, breadcrumbs, egg, 1/4 cup milk, salt, and pepper. Press into a greased 9×13-inch baking dish.
  3. Bake the meatloaf for about 20 minutes.
  4. Cook the macaroni according to package instructions until al dente; drain and set aside.
  5. In a saucepan, melt butter over medium heat. Stir in flour for about one minute. Gradually whisk in milk until thickened.
  6. Add salt, pepper, paprika, dry mustard, and 1½ cups cheese until melted.
  7. Combine cooked macaroni with cheese sauce and pour over the meatloaf. Top with remaining cheese.
  8. Bake again for an additional 25 minutes or until bubbly and golden brown.
