  • ¼ cup granulated sugar
  • ½ cup unsalted butter, cold and cubed
  • 1 egg yolk
  • 1½ cups whole milk
  • ¾ cup granulated sugar
  • 3 large egg yolks
  • ¼ cup cornstarch
  • Zest of 1 lemon
  • ½ cup fresh lemon juice (about 2 lemons)
  • 2 tablespoons unsalted butter

Instructions

  1. Make the crust: In a bowl, mix flour, sugar, and salt. Cut in cold butter until crumbly. Add egg yolk and cold water; mix until dough forms. Press into tart pan and chill for 20–30 minutes.
  2. Pre-bake the crust: Preheat oven to 350°F (175°C). Prick crust with fork and bake for 12–15 minutes until golden. Cool slightly.
  3. Prepare the lemon custard: In a saucepan, whisk together sugar, cornstarch, lemon zest, and yolks. Gradually add milk while whisking continuously until thickened. Remove from heat; stir in lemon juice, butter, and vanilla.
  4. Bake the tart: Pour custard into pre-baked crust and bake for 25–30 minutes until set but slightly jiggly in the center. Cool completely before serving.
