  • 1/2 cup unsalted butter, melted
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1 cup granulated sugar (for filling)
  • 1/4 cup all-purpose flour (for filling)
  • 1/3 cup fresh lemon juice
  • 1 tablespoon lemon zest

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix flour, sugar, baking powder, melted butter, and salt until crumbly. Reserve 1/2 cup for topping. Press remaining mixture into an 8×8-inch baking pan lined with parchment paper. Bake for about 12-15 minutes until golden.
  3. In another bowl, whisk eggs, sugar, flour, lemon juice, and lemon zest until smooth.
  4. Pour the lemon mixture over the baked crust and sprinkle reserved crumbs on top.
  5. Bake for an additional 20-25 minutes or until set and lightly golden.
  6. Cool completely before chilling in the refrigerator for at least one hour. Slice and enjoy!
