  • 2 tablespoons olive oil
  • 1 ¼ lbs. boneless skinless chicken breast
  • lemon pepper seasoning
  • 1 teaspoon EACH: dried oregano, basil, parsley, mustard powder
  • ½ teaspoon dried dill weed
  • ½ cup dry white grape juice
  • 2 tablespoons butter
  • 1 small yellow onion (diced)
  • ¾ cup carrots (diced)
  • 2 sticks celery (diced)
  • 4 cloves garlic
  • 6 cups chicken broth
  • 1 teaspoon hot sauce
  • 1 teaspoon Worcestershire sauce
  • ½ cup heavy cream
  • 2 cups fresh spinach
  • Juice of 1 lemon (34 Tbsp.)
  • ¾ cup orzo (uncooked)

Instructions

  1. Heat olive oil in a pot over medium-high heat. Season chicken with lemon pepper and sear until golden brown (3-4 minutes per side). Remove and dice.
  2. In the same pot, pour in white grape juice, scraping up bits from the bottom. Simmer until reduced by half. Add butter, onion, carrots, celery; sauté for about 5 minutes. Stir in garlic and cook for another minute.
  3. Add dried herbs, hot sauce, Worcestershire sauce; combine then pour in chicken broth. Bring to boil and reduce to simmer. Return diced chicken to pot and simmer until cooked through.
  4. Cook orzo separately according to package instructions; drain. Stir cream and Parmesan into the soup until creamy.
  5. Add spinach just before serving, allowing it to wilt for 2-3 minutes. Squeeze fresh lemon juice into the soup.
  6. Serve by placing cooked orzo in bowls and ladling soup on top.
