  • 2 cups graham cracker crumbs

  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup sour cream
  • 3 medium apples, peeled and diced
  • ⅓ cup brown sugar
  • ¾ cup all-purpose flour
  • 1 teaspoon cinnamon
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • 1 tablespoon lemon juice

Instructions

  1. Preheat your oven to 325°F (160°C). In a bowl, mix graham cracker crumbs, melted butter, and sugar. Press into the bottom of a springform pan.
  2. Beat cream cheese until smooth, then add sugar and vanilla. Mix in eggs one at a time and fold in sour cream.
  3. Pour the cheesecake filling over the crust and set aside.
  4. In a saucepan over medium heat, combine apples, brown sugar, cinnamon, cornstarch mixed with water, and lemon juice. Cook until slightly tender.
  5. Spread the apple mixture over the cheesecake filling.
  6. For the crumble topping, mix flour, brown sugar, cinnamon, and cold cubed butter until crumbly; sprinkle over apples.
  7. Bake for about 65 minutes until set but slightly wobbly in the center. Allow to cool before refrigerating for at least four hours.
