  • 8 chicken thighs
  • ½ head cabbage, roughly chopped
  • 4 potatoes, peeled and sliced into ¼-inch rounds
  • 1 medium onion, sliced
  • ½ cup chicken stock
  • 1 ½ teaspoons thyme
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ¼ teaspoon black pepper
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, mix dry rub ingredients and coat chicken thighs evenly.
  3. In a large oven-safe sauté pan, cook bacon until crispy (optional), then remove.
  4. Sear seasoned chicken thighs in the bacon fat until golden brown; set aside.
  5. Sauté chopped cabbage in the same pan for 2-3 minutes.
  6. Add sliced potatoes and onions; pour in chicken stock and season with salt and pepper.
  7. Stir in chopped bacon (if using) and place seared chicken on top.
  8. Bake for 45–50 minutes until chicken reaches 165°F (75°C).
