  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1/2 cup fresh cranberries
  • 1/4 cup honey
  • 1/4 cup orange juice
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 ounces brie cheese, rind removed and cut into small pieces
  • 1/4 cup chopped fresh parsley
  • 1/2 cup panko breadcrumbs
  • 1 tablespoon butter, melted

Instructions

  1. Preheat your oven to 375°F (190°C). In a saucepan, heat olive oil over medium heat and cook cranberries until they soften (about 5 minutes). Stir in honey, orange juice, cinnamon, ginger, salt, and pepper; cook until slightly thickened.
  2. Cut pockets into each chicken breast and stuff with Brie and cranberry mixture. Secure with toothpicks.
  3. Sear stuffed chicken in a hot skillet for about 2-3 minutes on each side until golden brown. Top with panko breadcrumbs mixed with melted butter.
  4. Bake in the oven for 20-25 minutes until the internal temperature reaches 165°F (74°C).
  5. Let rest for five minutes before serving. Garnish with fresh parsley.
