- 1 cup light brown sugar, packed
- 1/2 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 1/2 teaspoons ground cinnamon
- 1/2 teaspoon ground nutmeg (optional)
- 1/2 teaspoon salt
- 3 cups old-fashioned rolled oats
- 2 cups powdered sugar, sifted
- 3–4 tablespoons milk or cream
- 1 teaspoon vanilla extract
- Pinch of salt (optional)
- Preheat your oven to 350°F (175°C).
- In a large bowl, cream together softened butter, light brown sugar, and granulated sugar until light and fluffy.
- Add eggs one at a time along with vanilla extract; mix well.
- In another bowl, whisk together flour, baking soda, cinnamon, nutmeg (if using), and salt. Gradually mix into wet ingredients until just combined.
- Gently fold in old-fashioned rolled oats.
- Spread batter evenly into a greased baking dish and bake for 25-30 minutes until golden brown.
