  • 2 large chicken breasts, cubed
  • 10 oz rigatoni pasta
  • 1/3 cup honey
  • 1 1/2 teaspoons freshly cracked black pepper
  • 3 tablespoons olive oil
  • 2 tablespoons butter
  • 2 tablespoons soy sauce
  • 3 cloves garlic, minced
  • 2 medium carrots, sliced
  • Salt to taste
  • 2 tablespoons chopped green onions for garnish

Instructions

  1. Cook rigatoni pasta in salted water until al dente according to package instructions. Reserve half a cup of pasta water before draining.
  2. Season chicken cubes with salt and black pepper. In a skillet over medium-high heat, heat olive oil and cook chicken until golden brown (5-7 minutes). Set aside.
  3. In the same skillet, add remaining olive oil and carrots; sauté for about 3-4 minutes. Add garlic and cook for another minute until fragrant.
  4. Reduce heat to medium; add butter until melted. Stir in honey, soy sauce, and black pepper; simmer for about 2-3 minutes until slightly thickened.
  5. Return chicken to the skillet; add cooked rigatoni and mix well. Adjust consistency with reserved pasta water as needed.
  6. Serve topped with chopped green onions.
