  • 1 lb ground beef or ground chicken
  • 1/4 cup breadcrumbs
  • 1 egg
  • 1/3 cup honey
  • 1 cup uncooked long grain or jasmine rice
  • 2 cups chicken broth
  • Mixed bell peppers and peas

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix ground meat, breadcrumbs, egg, onion, garlic, soy sauce, sesame oil, salt, and pepper until combined. Form into meatballs.
  3. Sear meatballs in a skillet over medium heat until browned.
  4. In a saucepan, combine honey, soy sauce, ketchup, water, and garlic; simmer to blend flavors.
  5. Spread rice in a greased baking dish; layer with bell peppers and peas; drizzle with olive oil.
  6. Nestle seared meatballs into the rice mixture and pour the honey garlic sauce over everything.
  7. Cover with foil and bake for 40 minutes; uncover and bake for an additional 10–15 minutes until rice is fully cooked.
