  • 1 and 1/2 cups almond flour
  • 1/4 cup cashew butter (or peanut butter)
  • 1/4 cup maple syrup
  • 2 tbsp melted coconut oil
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1/4 cup chocolate chips
  • 1 cup chocolate chips (for topping)
  • 1 tsp coconut oil (for topping)
  • Flaky sea salt, optional

Instructions

  1. In a bowl, mix almond flour, cashew butter, maple syrup, melted coconut oil, vanilla extract, and salt until well combined. Stir in chocolate chips.
  2. Line a cutting board with parchment paper and transfer the mixture onto it. Press down to form an even layer about half an inch thick.
  3. In a small bowl, melt additional chocolate chips with coconut oil in the microwave until smooth. Pour over the cookie dough base and sprinkle with flaky sea salt.
  4. Chill in the freezer for about 10 minutes until set. Cut into chunks and enjoy!
