  • 4 tbsp sweetener (erythritol, monk fruit sweetener, honey, or maple syrup)
  • 1 tsp vanilla extract
  • 2 tbsp cornstarch (or coconut flour)
  • 1 ½ cups mixed berries (fresh or frozen)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking dish.
  2. Blend the cottage cheese until smooth in a high-speed blender.
  3. Add eggs, sweetener, vanilla extract, cornstarch, and optional lemon zest; blend until combined.
  4. Pour the mixture into your prepared baking dish.
