  • 4 tablespoons unsalted butter (melted, divided)
  • 1 teaspoon kosher salt
  • ½ teaspoon pepper

Instructions

  1. Preheat your oven to 425°F.
  2. Place a potato between two chopsticks or skewers and cut vertical slits about ⅛ inch apart without slicing all the way through. Repeat with remaining potatoes.
  3. Arrange sliced potatoes in an unlined baking dish and brush half of the melted butter over them, ensuring it gets into the slits.
  4. Season generously with kosher salt and pepper.
  5. Bake for 30 minutes.
  6. After the initial bake, gently separate layers with a knife and brush with remaining melted butter. Bake for another 30-35 minutes until crispy outside and tender inside.
  7. Cool slightly before serving warm.
