  • 1 lb shrimp (peeled and deveined)
  • 2 tbsp olive oil
  • 1/2 cup mayonnaise
  • 4 large flour tortillas
  • 2 cups romaine lettuce (chopped)
  • 1 tbsp lemon juice
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/4 tsp black pepper
  • 1/4 tsp salt
  • 1 garlic clove (minced)
  • 1 tsp Dijon mustard
  • 2 tsp vinegar (as substitute for Worcestershire sauce)
  • 1/2 cup croutons (optional)
  • 1/2 cup Parmesan cheese (shaved)
  • Turkey Bacon (cooked and crumbled – optional)

Instructions

  1. Toss shrimp with olive oil, garlic powder, paprika, salt, and pepper in a bowl. Grill for 2-3 minutes on each side until pink.
  2. Whisk together mayonnaise, lemon juice, vinegar, Dijon mustard, and minced garlic to make the dressing. Season with salt and pepper.
  3. Warm tortillas in a skillet for about 30 seconds. Spread dressing on each tortilla and layer with grilled shrimp and romaine lettuce.
  4. Roll tightly and slice in half to serve.
