- 1 lb shrimp (peeled and deveined)
- 2 tbsp olive oil
- 1/2 cup mayonnaise
- 4 large flour tortillas
- 2 cups romaine lettuce (chopped)
- 1 tbsp lemon juice
- 1 tsp garlic powder
- 1 tsp paprika
- 1/4 tsp black pepper
- 1/4 tsp salt
- 1 garlic clove (minced)
- 1 tsp Dijon mustard
- 2 tsp vinegar (as substitute for Worcestershire sauce)
- 1/2 cup croutons (optional)
- 1/2 cup Parmesan cheese (shaved)
- Turkey Bacon (cooked and crumbled – optional)
- Toss shrimp with olive oil, garlic powder, paprika, salt, and pepper in a bowl. Grill for 2-3 minutes on each side until pink.
- Whisk together mayonnaise, lemon juice, vinegar, Dijon mustard, and minced garlic to make the dressing. Season with salt and pepper.
- Warm tortillas in a skillet for about 30 seconds. Spread dressing on each tortilla and layer with grilled shrimp and romaine lettuce.
