  • 1 cup frozen corn (thawed)
  • 1/2 cup red onion (diced)
  • 1/4 cup cilantro (chopped)
  • 1 jalapeño (seeded and minced (optional))
  • 1 lime (juiced)
  • Salt to taste
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tablespoon cilantro (chopped)
  • 1 tablespoon lemon juice
  • 1 clove garlic (minced)
  • 1 avocado (sliced or mashed)
  • Sesame seeds (for garnish)
  • Green onions (chopped, for garnish)

Instructions

  1. In a bowl, toss shrimp with olive oil, paprika, garlic powder, salt, black pepper, and optional cayenne pepper. Marinate for at least 15 minutes.
  2. Prepare corn salsa by mixing thawed corn, diced onion, minced jalapeño (if using), chopped cilantro, lime juice, and salt in another bowl.
  3. Preheat grill to medium heat and grill marinated shrimp for about 2-3 minutes per side until pink and cooked through.
  4. For the creamy garlic sauce, whisk together mayonnaise, sour cream, chopped cilantro, lime juice, minced garlic, salt, and pepper in a small bowl.
  5. Assemble bowls with corn salsa at the base topped with grilled shrimp and avocado slices or mash. Drizzle creamy garlic sauce over the top.
