  • 1 tablespoon fresh oregano, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 egg
  • 1 cup orzo pasta
  • 2 cups vegetable broth
  • Juice of 1 lemon
  • Zest of 1 lemon
  • Salt and pepper to taste
  • Chopped fresh parsley or dill for garnish

Instructions

  1. In a large mixing bowl, combine ground chicken, breadcrumbs, Parmesan cheese, minced garlic, chopped herbs, salt, pepper, and egg. Mix until just combined and form into 1-inch meatballs.
  2. Heat olive oil in a non-stick skillet over medium heat. Add meatballs and cook until golden brown on all sides.
  3. In another pot, bring vegetable broth to a boil. Add orzo and cook according to package instructions until al dente.
  4. Drain excess liquid from the orzo and stir in lemon juice, zest, salt, and pepper. Gently add cooked meatballs.
  5. Serve garnished with fresh parsley or dill.
