  • ½ batch rough puff pastry or classic puff pastry (or store-bought)
  • All-purpose flour (for dusting)
  • 1 egg whisked with 1 teaspoon of water (for egg wash)
  • 1 cup fig jam
  • ½ cup caramelized onions, rough chopped
  • 4 ounces goat cheese
  • 610 sprigs of fresh thyme

Instructions

  1. Prepare the pastry by rolling out to ⅛-inch thickness on a floured surface.
  2. Cut out circles using a 2-3/4-inch cutter and dock each circle with a smaller cutter.
  3. Arrange on a lined baking sheet, brush with egg wash, and place a heaping teaspoon of caramelized onions in the center.
  4. Chill briefly while preparing fig jam in a piping bag.
  5. Bake at 400ºF for about 12 minutes until puffy, then quickly add fig jam and goat cheese before returning to the oven for another 5-8 minutes until golden brown.
  6. Cool slightly and garnish with fresh thyme before serving.
