  • 45 ripe peaches (peeled and diced)
  • 1/3 cup cane sugar
  • 2 tablespoons cornstarch or tapioca starch
  • 1 teaspoon ground cinnamon
  • 1 tablespoon orange juice
  • 1 1/4 cups gluten-free flour blend
  • 1 cup gluten-free quick oats
  • 1/4 cup brown sugar
  • 6 tablespoons solid coconut oil
  • 2 tablespoons pure maple syrup

Instructions

  1. Preheat your oven to 375°F (190°C) and line an 8×8-inch baking pan.
  2. In a bowl, combine diced peaches with cane sugar, cornstarch, cinnamon, and orange juice. Set aside.
  3. In another bowl, mix flour blend, oats, brown sugar, and sea salt. Cut in solid coconut oil until crumbly; add maple syrup and coconut milk.
  4. Press two-thirds of the mixture into the pan as the base. Add the peach filling on top and sprinkle remaining crumble over it.
  5. Bake for 40-45 minutes until golden brown and bubbly. Cool before slicing.
