  • lbs sirloin steak, cut into bite-sized cubes
  • lbs baby potatoes, halved or quartered
  • 4 tablespoons olive oil (divided)
  • 4 tablespoons butter
  • 56 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon dried Italian herbs
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the halved baby potatoes with salt, pepper, and paprika. Cook until golden and fork-tender (about 15 minutes), stirring occasionally.
  2. Season the steak cubes with salt, pepper, and dried Italian herbs. In the same skillet, add another tablespoon of olive oil and 2 tablespoons of butter. Sear the steak for 2–3 minutes per side until browned but not overcooked.
  3. Lower the heat to medium-low; add the remaining butter and minced garlic to the pan. Sauté for about 1 minute until fragrant. Return the potatoes to the skillet and toss everything together.
  4. Cook for an additional minute or two to combine flavors. Garnish with fresh parsley before serving hot.
