  • 2 cups Broccoli florets
  • 2 cups Cauliflower florets
  • 2 cups Carrots, sliced
  • 1 medium Red bell pepper, chopped
  • 1 medium Yellow bell pepper, chopped
  • 4 tablespoons Olive oil
  • 4 cloves Garlic, minced
  • Salt and pepper to taste
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried thyme
  • 1/4 cup Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and chop the broccoli and cauliflower into bite-sized florets. Slice carrots into rounds and chop the bell peppers.
  3. In a large mixing bowl, combine all the veggies with olive oil, garlic, salt, pepper, oregano, and thyme. Toss until well coated.
  4. Spread the mixture evenly on a baking sheet in a single layer.
  5. Roast for 25-30 minutes, stirring halfway through until tender and golden.
  6. Serve garnished with fresh parsley.
