Garlic Parmesan Duchess Potatoes are a delightful blend of creamy mashed potatoes infused with roasted garlic and topped with melted butter for a golden, crispy finish. These elegant, swirled potato shapes are not only a feast for the eyes but also a deliciously rich side dish that pairs perfectly with any main course.

Ingredients

  • 1 large bulb of garlic
  • 1.3kg / 2.8lb baking potatoes
  • 5 tbsp / 75g butter (2 tbsp/30g melted, the rest at room temperature)
  • 2 tbsp double cream (at room temperature)
  • 60g / 3/4 cup freshly grated Parmesan cheese
  • 4 large egg yolks
  • Olive oil (as needed)
  • Salt & pepper (to taste)
  • Fresh parsley (for garnish)

Instructions

  1. Preheat the oven to 180C/356F. Slice the top off the garlic bulb, drizzle with olive oil, wrap in foil, and roast for about 50-60 minutes until soft.
  2. Peel and dice the baking potatoes into large chunks. Place in salted cold water and bring to a boil until fork-tender.
  3. Drain the potatoes and return them to the pot. Add melted butter, roasted garlic cloves, cream, and Parmesan cheese. Mash until creamy.
  4. Spoon the mixture into a piping bag fitted with a large star tip and pipe swirls onto a lined baking tray.
  5. Drizzle piped potatoes with melted butter and bake at 200C/400F for about 15-20 minutes until golden brown.
  6. Garnish with fresh parsley and extra Parmesan before serving.
