  • 4 large Yukon Gold potatoes, sliced ¼-inch thick
  • 1 tablespoon butter (for greasing)
  • 1 cup shredded Gruyère cheese (or Swiss, cheddar, or mozzarella)
  • ½ cup Parmesan cheese, grated
  • 1 cup heavy cream or whole milk
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon fresh thyme leaves
  • Fresh thyme sprigs (for garnish)
  • Extra Parmesan cheese (for garnish)
  • Crispy fried onions (optional, for extra crunch)

Instructions

  1. Sauté sliced onions in butter and olive oil over medium heat until golden brown (15-20 minutes).
  2. Grease a baking dish with butter and layer half of the potato slices on the bottom.
  3. Sprinkle with garlic powder and thyme, then add half of the caramelized onions.
  4. Layer remaining potatoes, garlic powder, thyme, and top with remaining onions.
  5. Mix heavy cream, salt, pepper, Gruyère cheese, and Parmesan; pour over layered ingredients.
  6. Cover with foil and bake at 375°F (190°C) for 45 minutes; uncover and bake for an additional 15-20 minutes until bubbly.
