  • Salt & pepper (to taste)
  • 1 cup unsalted butter (softened)
  • 1 tablespoon fresh sage (chopped finely)
  • 1 tablespoon fresh thyme (chopped finely)
  • 1 tablespoon fresh rosemary (chopped finely)
  • 4 cloves garlic (minced)
  • 1 lemon (halved)

Instructions

  1. Remove the turkey from the fridge an hour before cooking to let it warm slightly. Preheat your oven to 450°F.
  2. In a bowl, mix softened butter with chopped herbs and minced garlic until well combined.
  3. Pat the turkey dry and season inside and out with salt and pepper. Stuff the cavity with lemon halves, fresh herbs, and peeled garlic cloves, then rub it down with herb butter.
  4. Place the turkey breast side up on a roasting rack in a pan. Immediately reduce oven temperature to 350°F and roast until the internal temperature reaches 165°F in the thigh, about three hours.
  5. Let the turkey rest for at least twenty minutes before carving.
