  • ¼ cup double cream
  • 3 ½ oz unsalted ground pistachios
  • 3 ½ oz kataifi pastry (chopped and separated)
  • 9 oz milk chocolate (finely chopped)
  • ¾ cup all-purpose flour
  • ⅔ cup cornstarch
  • 1 tsp sugar
  • ½ tsp salt
  • 1 tbsp vegetable oil
  • 1 cup water

Instructions

  1. In a bowl, whisk flour, cornstarch, sugar, and salt for the batter.
  2. Add vegetable oil and water; whisk until smooth. Let rest for 30 minutes.
  3. Heat a nonstick pan over medium-low heat and pipe batter into thin strands, cooking until set and pale.
  4. Toast kataifi strands in butter until golden.
  5. Melt white chocolate with double cream; blend with ground pistachios.
  6. Combine toasted kataifi with pistachio cream, chill for an hour.
  7. Roll mixture into balls; dip each in melted milk chocolate and garnish with chopped pistachios.
  8. Refrigerate until set.
