  • 1/2 cup granulated sugar
  • 1/4 cup powdered sugar
  • 1 egg (room temperature)
  • 2 & 1/3 cups all-purpose flour
  • 5 oz pumpkin puree
  • 3 oz cream cheese (softened)
  • Pumpkin pie spice

Instructions

  1. Preheat your oven to 350°F and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together soften butter, oil, granulated sugar, and powdered sugar until light and fluffy.
  3. Add the egg and vanilla extract; mix until combined.
  4. Gradually incorporate flour, salt, and baking powder until just combined.
  5. Scoop nine equal portions onto the prepared baking sheet and flatten slightly. Create a small dip in the center of each for the filling.
  6. In a separate bowl, mix cream cheese, brown sugar, and pumpkin puree until smooth. Fill each cookie center with this mixture.
  7. Bake for 8-9 minutes until lightly golden at the edges. Cool on the sheet before transferring to a wire rack.
