Ingredients

Scale
  • pounds Brussels sprouts, trimmed and halved
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons balsamic vinegar
  • 1½ tablespoons honey (or maple syrup for a vegan option)
  • 1 teaspoon Dijon mustard (optional)
  • 1 small garlic clove, finely minced (optional)
  • Red pepper flakes (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Trim and halve the Brussels sprouts, then pat them dry to remove excess moisture.
  3. In a large bowl, toss the sprouts with olive oil, salt, and pepper until evenly coated.
  4. Spread the seasoned sprouts cut-side down on a parchment-lined baking sheet, ensuring they are not overcrowded.
  5. Roast for 20–25 minutes, flipping halfway through until golden brown and crispy.
  6. Meanwhile, combine balsamic vinegar, honey (or maple syrup), and optional Dijon mustard in a saucepan over low heat. Simmer for 2–3 minutes until thickened; add garlic if using.
  7. Toss the hot Brussels sprouts with the warm glaze immediately after roasting and serve hot.
