  • 1 pound ground chicken or turkey sausage

  • 1/2 cup sun-dried tomatoes (chopped)
  • 1 cup chicken broth
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes
  • 2 cups heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 2 cups baby spinach
  • Fresh basil leaves (for garnish)

Instructions

  1. Cook the penne pasta according to package directions until al dente. Reserve 1 cup of pasta water before draining.
  2. In a large skillet, heat olive oil over medium-high heat. Add the ground sausage and cook until browned (about 5-7 minutes).
  3. Reduce heat to medium and sauté minced garlic for about 1 minute, then add sun-dried tomatoes, chicken broth, Italian seasoning, and red pepper flakes.
  4. Stir in heavy cream and let simmer for 3-5 minutes until slightly thickened.
  5. Mix in grated Parmesan cheese and spinach until the spinach wilts.
  6. Toss cooked pasta into the skillet, using reserved pasta water to adjust sauce consistency if needed.
