  • 8 oz. cherry tomatoes
  • 4 garlic cloves
  • ¼ cup sun-dried tomatoes
  • 1 (15 oz) can cannellini beans
  • 1¼ cup vegetable broth
  • 1 tablespoon arrowroot starch
  • 2 cups baby greens
  • ¼ cup vegan cream cheese
  • Salt and pepper, to taste
  • 1 small lemon, juiced
  • ¼ cup fresh basil, sliced, to garnish

Instructions

  1. Sauté sliced onion in olive oil over medium heat for about 3 minutes until soft. Add halved cherry tomatoes and cook for another 5 minutes.
  2. Stir in minced garlic, chopped sun-dried tomatoes, and tomato paste; cook until fragrant (about 1 minute).
  3. In a small bowl, whisk arrowroot starch with a splash of broth until smooth. Add to remaining broth and mix well.
  4. Pour broth mixture into the pan with drained beans; simmer on low for about 5 minutes.
  5. Stir in vegan cream cheese and baby greens; cook until greens wilt. Finish with lemon juice, salt, and pepper to taste.
