  • 2 cloves garlic (minced)
  • 1 tablespoon all-purpose flour
  • 1 cup heavy cream (or whole milk)
  • 1/2 cup Parmesan cheese (optional)
  • 1 teaspoon fresh thyme
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly grease a medium-sized baking dish.
  2. Slice the Yukon gold potatoes as thinly as possible (about 1/16th of an inch).
  3. In a large pot, melt butter over medium heat with minced garlic until fragrant. Stir in flour to create a roux and cook for 1-2 minutes.
  4. Gradually add heavy cream, stirring continuously until thickened (about 5 minutes). Mix in Parmesan cheese (if using), thyme, salt, and pepper until smooth.
  5. Combine sliced potatoes with the sauce in a large bowl and gently toss to coat evenly.
  6. Arrange potato slices upright in the greased baking dish, pouring any leftover sauce over them.
