  • 2 Tbsp avocado oil
  • 1/2 tsp sea salt (to taste)
  • 1 tsp garlic powder
  • ½ tsp paprika
  • 1 cup yellow onion, chopped
  • 5 large cloves garlic, minced
  • 1 jar roasted red peppers (16 oz), drained
  • 1 can full-fat coconut milk (15 oz)
  • Optional: 1 cup cherry tomatoes and 5 oz baby spinach

Instructions

  1. Heat 1 tablespoon of avocado oil in a skillet over medium heat. Sauté onions until translucent.
  2. Add minced garlic and cook until fragrant. Stir in roasted red peppers and simmer for five minutes.
  3. Transfer the mixture to a blender along with coconut milk and blend until smooth.
  4. In the same skillet, heat another tablespoon of avocado oil over medium-high heat. Season salmon with sea salt, garlic powder, and paprika before cooking skin-side down until golden brown.
