  • 3 garlic cloves (minced)
  • 1 cup pumpkin puree
  • 1 1/2 cups heavy whipping cream

  • 1/4 teaspoon black pepper
  • 1/4 teaspoon ground sage
  • 1/8 teaspoon ground nutmeg
  • 1 teaspoon brown sugar
  • 1/2 cup freshly grated parmesan cheese

Instructions

  1. In a large pot, boil water and cook rigatoni according to package directions until al dente.
  2. In a skillet over medium heat, melt butter; add diced onion and sauté for about 5-7 minutes until soft. Add minced garlic and cook for an additional minute.
  3. Stir in pumpkin puree and sauté briefly before adding heavy cream while whisking to combine. Season with salt, black pepper, sage, nutmeg, and brown sugar; simmer for 2-3 minutes.
  4. Mix in freshly grated parmesan cheese until melted and smooth.
  5. Drain pasta and add it directly to the sauce in the skillet, tossing to coat evenly. Serve immediately with extra parmesan on top.
