  • 1 small butternut squash, peeled and diced (about 3 cups)
  • 1½ cups orzo pasta
  • 3 cups vegetable broth
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 2 tbsp butter
  • ½ cup grated Parmesan cheese
  • ¼ cup heavy cream
  • 2 cups baby spinach, roughly chopped

Instructions

  1. Preheat your oven to 400°F (200°C). Toss diced butternut squash with olive oil, salt, and pepper. Spread on a baking sheet and roast for about 25–30 minutes until tender.
  2. In a large saucepan over medium heat, melt butter and sauté minced garlic for about a minute. Add orzo and toast lightly for around 2 minutes.
  3. Pour in vegetable broth and simmer for about 10–12 minutes until orzo is tender yet al dente.
  4. Stir in Parmesan cheese and heavy cream until creamy. Add chopped spinach and cook until wilted. Fold in roasted squash before serving.
