  • 1 ½ cups graham cracker crumbs
  • 1 cup all-purpose flour
  • ½ cup granulated sugar (for the crust)
  • ¾ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • ½ cup granulated sugar (for the filling)
  • 2 large eggs
  • 1 tablespoon lemon zest
  • ¼ cup fresh lemon juice
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
  2. In a bowl, mix graham cracker crumbs, flour, sugar, and salt; stir in melted butter until combined.
  3. Press two-thirds of the crumb mixture into the bottom of the prepared pan.
  4. In another bowl, beat cream cheese until smooth. Add sugar, eggs one at a time, lemon zest, and juice; mix until smooth.
  5. Pour filling over crust and sprinkle remaining crumb mixture on top.
  6. Bake for 30–35 minutes until center is set but slightly jiggly.
  7. Cool at room temperature for an hour then refrigerate for at least three hours before slicing.
