  • 34 medium carrots, peeled and chopped
  • 12 stalks celery, chopped
  • 1/2 medium onion, chopped
  • 4 cups low-sodium chicken broth
  • 1 cup cream or half-and-half
  • 1 pound potato gnocchi
  • 3 cups baby spinach
  • 2 Tablespoons fresh parsley, chopped
  • 45 cloves garlic, minced
  • 1 Tablespoon Italian seasoning
  • salt and black pepper to taste
  • 1 teaspoon Better than Bouillon chicken seasoning base (optional)
  • pinch red pepper flakes (optional)
  • 12 Tablespoons cornstarch

Instructions

  1. Place chicken, carrots, celery, onion, garlic, parsley, Italian seasoning, salt, and pepper in a slow cooker.
  2. Pour in chicken broth and stir gently.
  3. Cover and cook on low for 6-8 hours or high for 4 hours.
  4. Shred the cooked chicken inside the pot using two forks.
  5. Whisk together cream (or half-and-half) with cornstarch; add to soup along with gnocchi and spinach.
  6. Cook on high for another 30-45 minutes until heated through.
  7. Adjust seasoning as needed before serving.
