  • 1/4 cup coconut oil (liquid state)
  • 1/4 cup sour cream (or Greek yogurt)

  • 2 teaspoons cinnamon
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon ground nutmeg
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • For the Cream Cheese Filling:
  • 4 ounces softened cream cheese
  • 1 large egg
  • 1/4 cup granulated sugar
  • 3 tablespoons all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×5-inch loaf pan by greasing it lightly.
  2. In a large bowl, whisk together pumpkin puree, egg, sugars, coconut oil, sour cream, vanilla extract, cinnamon, pumpkin pie spice, and nutmeg until well combined.
  3. Gently fold in flour, baking powder, baking soda, and optionally salt until just mixed.
  4. Pour two-thirds of the batter into the prepared loaf pan and smooth the top.
  5. In another bowl, mix cream cheese filling ingredients until smooth; pour over the batter in the pan.
  6. Top with remaining pumpkin batter; bake for about 48 minutes until golden brown.
  7. Let cool for at least 15 minutes before slicing.
