  • 1 cup old-fashioned oats
  • 1 cup corn flakes
  • 1 cup toasted pecans (chopped)
  • 1/2 cup coconut flakes
  • 6 oz peanut butter chips
  • 6 oz semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a skillet over medium heat, toast chopped pecans until fragrant (3–5 minutes). Set aside to cool.
  3. In a large bowl, cream softened butter until fluffy. Add both sugars and mix until combined.
  4. Beat in eggs one at a time, followed by vanilla extract.
  5. In a separate bowl, whisk together flour, salt, baking powder, and baking soda.
  6. Gradually add dry ingredients to the wet mixture without overmixing.
  7. Fold in oats, corn flakes, toasted pecans, coconut flakes, peanut butter chips, and chocolate chips until just combined.
  8. Chill the dough in the fridge for at least an hour.
  9. Scoop generous portions onto prepared baking sheets and bake for about 12–14 minutes or until golden on the edges.
