  • 15.5 oz black-eyed peas
  • 15 oz sweet corn
  • 1 cup fresh cilantro
  • ½ cup red bell pepper
  • ½ cup orange bell pepper
  • ½ cup red onion
  • 1 tsp chili powder
  • ½ tsp kosher salt
  • ¼ cup granulated sugar
  • ½ cup olive oil
  • ⅓ cup white apple vinegar
  • 1 tbsp fresh lime juice
  • ¼ tsp garlic powder

Instructions

  1. Drain and rinse the black beans, black-eyed peas, and sweet corn; pat dry.
  2. In a large bowl, combine the beans and corn with chopped cilantro, diced red and orange bell peppers, and diced red onion.
  3. In another bowl, whisk together chili powder, salt, sugar, olive oil, vinegar, lime juice, and garlic powder until smooth.
  4. Pour the dressing over the bean mixture and stir gently to coat evenly.
  5. Chill in the refrigerator for at least 30 minutes before serving.
