  • 15.5 oz. black beans, drained and rinsed
  • 15.5 oz. black-eyed peas, drained and rinsed
  • 15 oz. sweet corn, drained
  • 1 cup fresh cilantro, chopped
  • ½ cup red bell pepper, diced
  • ½ cup orange bell pepper, diced
  • ½ cup red onion, diced
  • 1 tsp. chili powder
  • ½ tsp. kosher salt
  • ¼ cup granulated sugar
  • ½ cup olive oil
  • ⅓ cup white apple vinegar
  • 1 tbsp. fresh lime juice
  • ¼ tsp. garlic powder

Instructions

  1. Drain and rinse the black beans, black-eyed peas, and corn. Pat dry to prevent a watery dip.
  2. In a large bowl, combine the beans and corn with chopped cilantro, diced red and orange bell peppers, and red onion.
  3. In a separate bowl, whisk together chili powder, salt, sugar, olive oil, vinegar, lime juice, and garlic powder until smooth.
  4. Pour the dressing over the bean mixture and gently stir until well coated.
  5. Refrigerate for at least 30 minutes before serving to allow flavors to meld.
