1½ – 2 lbs ribeye, sirloin, or flank steak
Salt & pepper to taste
1 tbsp olive oil
Slider buns or mini brioche rolls
½ cup unsalted butter, melted
2 cloves garlic, minced
1 tbsp fresh parsley, chopped
1 tsp Dijon mustard
½ tsp red pepper flakes
1 tsp lemon juice
½ tsp paprika
¼ tsp salt
¼ tsp black pepper
Instructions
In a bowl, mix melted butter with garlic, parsley, mustard, red pepper flakes, lemon juice, paprika, salt, and pepper. Set aside.
Pat the steak dry and season with salt and pepper.
Heat olive oil in a skillet over medium-high heat; sear steak for about 3–4 minutes on each side until medium-rare. Let it rest before slicing thinly against the grain.
Toast slider buns cut side down in the skillet until golden brown.
Assemble sliders by placing sliced steak on toasted buns and generously adding Cowboy Butter. Add desired toppings before closing with the top bun.
