  • 1/2 cup unsalted butter, melted
  • 1/4 cup dark cocoa powder
  • 1 cup granulated sugar
  • 2 tablespoons instant espresso powder
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup all-purpose flour
  • For the frosting: 1/4 cup unsalted butter, softened
  • 3 tablespoons heavy whipping cream
  • 1 3/4 cups powdered sugar
  • 1 1/2 teaspoons instant coffee granules

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8 pan with foil and spray with nonstick baking spray.
  2. In a bowl, whisk together melted butter and cocoa powder until smooth.
  3. Beat granulated sugar, eggs, espresso powder, and vanilla extract in another bowl until fluffy.
  4. Combine both mixtures and fold in the flour until just combined.
  5. Spread batter into prepared pan and bake for 25-28 minutes until slightly sticky when tested with a toothpick.
  6. Allow brownies to cool completely before frosting.
  7. For frosting, mix heavy cream with instant coffee until dissolved. Beat softened butter and salt until creamy; gradually add powdered sugar and coffee mixture until fluffy.
  8. Spread frosting over cooled brownies.
  9. Optionally melt dark chocolate chips with heavy cream for drizzling over frosted brownies.
