  • 2 tbsp granulated sugar
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp coconut extract
  • 8 oz Cool Whip, thawed
  • 2 (3.4 oz) boxes instant coconut cream pudding mix
  • 3 cups half-and-half or whole milk
  • 8 oz Cool Whip for topping
  • 1 cup sweetened shredded coconut, toasted

Instructions

  1. Prepare the crust by mixing graham cracker crumbs, sugar, and melted butter in a bowl. Press firmly into a 9×13-inch pan and chill.
  2. For the cream layer, beat softened cream cheese with powdered sugar until smooth. Mix in coconut extract and fold in thawed Cool Whip. Spread over the chilled crust.
  3. To make the pudding layer, whisk together the pudding mix with half-and-half until thickened. Spread on top of the cream layer.
  4. Add another layer of Cool Whip on top of the pudding and sprinkle with toasted shredded coconut. Refrigerate for at least six hours or overnight before serving.
