  • ½ cup sour cream
  • ½ cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon espresso powder
  • 1 cup hot water
  • 4 large egg yolks
  • 2 tablespoons granulated sugar
  • 2 tablespoons cornstarch
  • 2 cups heavy cream, divided
  • 3.5 oz dark chocolate, chopped
  • 4.5 oz white chocolate, chopped
  • 5 oz milk chocolate, chopped
  • ⅓ cup heavy cream

Instructions

  1. Preheat your oven to 350°F (180°C). Grease two 8-inch round cake pans and line with parchment paper.
  2. In a mixing bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, whisk together eggs, milk, sour cream, oil, and vanilla until smooth. Combine the wet and dry ingredients.
  4. Divide batter between prepared pans and bake for about 35 minutes or until a toothpick comes out clean. Let cool completely.
  5. For the mousse: heat heavy cream with vanilla until steaming. Whisk egg yolks with sugar and cornstarch until pale; gradually incorporate hot cream to temper the eggs.
  6. Divide custard into two bowls; add melted dark chocolate to one and white chocolate to the other. Fold in whipped cream until combined.
  7. Assemble by layering dark mousse on the first cake layer followed by white mousse; top with the second layer and refrigerate for at least 4 hours.
  8. For ganache: heat cream until steaming; pour over chopped milk chocolate, let sit then stir until smooth.
  9. Pour ganache over chilled cake before serving.
