  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 2 cups fresh spinach, chopped
  • 1 cup mushrooms, sliced
  • 3 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/4 cup chicken broth
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • 1 tsp dried thyme
  • Fresh parsley, chopped (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, add olive oil and season chicken breasts with salt, pepper, and dried thyme. Sear for 5-6 minutes per side until golden brown; set aside.
  3. In the same skillet, sauté minced garlic for about a minute. Add sliced mushrooms and cook until soft (about 5 minutes). Stir in chopped spinach until wilted (2-3 minutes).
  4. Pour in heavy cream and chicken broth; simmer for 3-4 minutes until slightly thickened.
  5. In a greased baking dish, place cooked chicken and pour the creamy sauce over it. Top with mozzarella and Parmesan.
  6. Bake for 15-20 minutes until cheese is bubbly and golden.
  7. Garnish with fresh parsley if desired and serve warm.
