  • 8 oz. pasta (penne or fusilli)
  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • Salt and black pepper to taste
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 can (14.5 oz.) diced tomatoes, undrained
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 2 cups shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Fresh basil leaves for garnish

Instructions

  1. Cook the pasta according to package directions in salted boiling water. Drain and set aside.
  2. In a large skillet over medium heat, add olive oil and season chicken with salt and pepper. Cook until golden brown, about 5-7 minutes. Remove from skillet and keep warm.
  3. In the same skillet, sauté garlic until fragrant (30 seconds). Stir in Italian seasoning and red pepper flakes.
  4. Add diced tomatoes, chicken broth, and heavy cream; bring to a simmer while stirring occasionally.
  5. Return cooked pasta and chicken to the skillet; toss to coat in sauce.
  6. Stir in mozzarella and Parmesan cheese until melted, cooking for a few more minutes.
  7. Garnish with fresh basil before serving.
