  • 2 slices of sourdough or artisan bread
  • 1/2 ripe avocado, mashed
  • 1/2 cup cooked shredded chicken (grilled or rotisserie)
  • 2 slices of cheddar or Monterey Jack cheese
  • 1 tablespoon mayonnaise or aioli (optional)
  • 1 teaspoon lemon juice
  • 1 tablespoon butter (for toasting)
  • Salt and pepper to taste

Instructions

  1. In a small bowl, mash the avocado with lemon juice, salt, and pepper.
  2. Spread mayonnaise on one side of each bread slice; on the other side of one slice, spread the avocado mixture. Layer shredded chicken and cheese on top, then place the second slice of bread on top with mayo side facing out.
  3. Heat butter in a skillet over medium heat. Grill the sandwich for about 3–4 minutes per side until golden brown and the cheese melts.
  4. Remove from pan, slice in half, and serve hot.
