  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup European-style unsalted butter (browned)
  • 1 cup light brown sugar
  • 1/3 cup pure maple syrup
  • 1 large egg yolk
  • 1/2 cup canned pumpkin (blotted)
  • 2 teaspoons vanilla extract

Instructions

  1. Prepare brown butter by melting it over medium heat until golden brown, then allow it to cool.
  2. Blot the canned pumpkin using paper towels to remove excess moisture.
  3. In a bowl, whisk together flour, spice blend, baking soda, and salt.
  4. In another bowl, mix cooled brown butter with light brown sugar and maple syrup until smooth.
  5. Stir in the egg yolk and blotted pumpkin, followed by the vanilla extract.
  6. Gradually add dry ingredients to wet mixture until just combined.
  7. Cover dough and refrigerate for at least 8 hours or overnight.
  8. Preheat oven to 350°F (177°C) and line baking sheets with parchment paper.
  9. Roll chilled dough into balls, coat in spiced sugar mixture, and place on prepared sheets.
  10. Bake for 12-14 minutes or until lightly golden around the edges.
