  • 200g cheese (cheddar or tasty)
  • 2 tbsp fresh rosemary (finely chopped)
  • 2 tbsp fresh parsley (finely chopped)
  • 2 garlic cloves (crushed)
  • 3 tbsp extra virgin olive oil
  • 2¼ cups plain flour
  • 1 tsp baking soda
  • ½ cup plain yogurt
  • ¾ cup full-fat milk
  • 2 large eggs
  • 50g unsalted butter (melted)

Instructions

  1. Preheat your oven to 180°C (350°F). Grease and line a loaf pan with baking paper.
  2. Mix rosemary, parsley, dried oregano, thyme, crushed garlic, olive oil, and salt in a bowl to create an herb mixture.
  3. In another bowl, whisk together flour, baking soda, and salt.
  4. In a separate bowl, combine yogurt, milk, eggs, melted butter, olive oil, and crushed garlic until smooth.
  5. Combine wet ingredients into the dry ingredients gently until just mixed.
  6. Layer one-third of the batter in the loaf pan followed by one-third of the herb mixture and cheese slices; repeat twice more.
  7. Bake for about 30 minutes uncovered then cover with foil for another 20 minutes until cooked through.
  8. Cool before slicing.
