  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup ricotta cheese
  • 1/4 cup powdered sugar
  • 1/4 teaspoon cinnamon
  • 1/2 cup mini chocolate chips
  • 1/4 cup granulated sugar (for rolling)
  • 1 teaspoon cinnamon (for rolling)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
  3. In a large bowl, cream softened butter and granulated sugar until light and fluffy. Beat in egg and vanilla until combined.
  4. Gradually mix dry ingredients into wet ingredients until just combined.
  5. In another bowl, combine ricotta cheese, powdered sugar, cinnamon, and chocolate chips for the filling.
  6. Roll dough into 1-inch balls and roll in cinnamon-sugar mixture before placing on a baking sheet.
  7. Flatten each ball slightly with the bottom of a glass and bake for 10-12 minutes or until edges are golden.
  8. Allow cookies to cool before spreading ricotta filling on one cookie side and sandwiching with another.
