  • 2 teaspoons garlic, minced
  • 1 teaspoon Cajun seasoning
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • ¼ teaspoon cayenne pepper
  • 4 cups (960 g) chicken broth
  • 4 large russet potatoes, peeled and cubed
  • ½ cup (119 g) heavy cream
  • 1 cup (113 g) mild cheddar cheese, shredded
  • Parsley, chopped for garnish

Instructions

  1. Heat vegetable oil in a large pot over medium heat. Add sliced sausage and brown slightly.
  2. Stir in diced onion, celery, bell pepper, and garlic; sauté for about 5 minutes until softened.
  3. Sprinkle in Cajun seasoning, kosher salt, black pepper, paprika, and cayenne; mix well.
  4. Pour in chicken broth and bring to a gentle boil. Add cubed potatoes and simmer for 30 minutes until tender.
  5. Lower heat and stir in heavy cream and shredded cheese until melted; adjust seasoning if needed.
